Antioxidancia

Antioxidancia jsou všeobecně látky, zabraňující oxidaci jiné sloučeniny tím, že se samy oxidují. V reakci s reaktivními toxickými metabolity kyslíku vytváří relativně stabilní a netoxické produkty a současně mohou zabránit oxidaci některé z cílových molekul. Antioxidační látka by neměla spouštět další radikálové reakce, při nichž se tvoří řetězovitě další produkty charakteru volných radikálů nebo šířeji nazvaných reaktivních forem kyslíku. Zabrzděním těchto procesů se zabrání iniciaci stavů, vedoucích k vývoji řady nemocí.
